Baroncini 1489 'Riserva', Chianti DOCG
Authentic food friendly chianti with warm spicy fruit and a rustic edge. Meaty, savoury aromas with a touch of wild cherry and
subtle spice notes. On the palate the wine is full bodied with plum,
dried black fruits, more savoury characters and a hint of spice. Rounded
and long with a bitter cherry finish.
Made from Sangiovese, Canaiolo and Malvasia grapes, harvested when
fully ripe. Grapes are grown on chalk and pilocene shell soils with
3500 vines per hectare at an altitude 0f 300 metres above sea level.
Because of the hilly aspect of the area there exists a micro climate,
humid in winter and spring and warm and dry in the summer. Long maceration on skins after fermentation is followed by a short period of ageing in large Slavonian oak casks.
A perfect accompaniment to local dishes such as wild boar ragu or rabbit stew. Try also with ripe cheeses especially Parmesan.
